Justin graciously kept his cafe open after hours for CA and welcomed our filming project while explaining how he found a way to nest his thriving business and keep the environment healthy. The cafe space inspires all consumers to consider how their thought processes effect their decision making regarding nutritional intake and economic/community investment. Jorge Flores - Cassava
Jorge Flores founded Cassava in order to share his culture as well as his passion for tasty and sustainable food without artificial preservatives, flavorings, colors, “or anything else lab made… we’re all about freshness and taste- everything is made in house and in small batches.”
Jorge offered a discounted catered menu for our Meet The Board event with live music and candles, which made for quite a special after hours dining experience. CA members networked, shared helpful clinical resources, supported one another, and enjoyed curry coconut chicken, fresh meatloaf, green beans, hot chocolate and smoothy shots, as well as gluten free cheesy bread roles while chatting it up with CA board members. Joseph Younan - Aje Cafe
Meet Aje’s co-owner and sandwich artist, Joseph Younan- “We make everything by hand as if we’re making it for ourselves”- he says with a smile as he greets his customers at the door. Aje is proud to offer locally roasted coffee and baked goods from a small bakery in Evanston.
CA hosted its Social Media Impact event on Aje’s cozy crushed red velvet couch in a bay window nook overlooking Clark St. We discussed social media's impact on our professional and personal lives as well as the role that technology plays within our clients' experiences (regarding empowerment, access to community resources, pathology, and more) while snacking on delicious handmade sandwiches and local brews. Jillian Dorrestein - Très Jolie PâtisserieJillian´s culinary education began at an early age while observing her grandmother at work in her home kitchen. She studied in Paris in 2002, and discovered the true meaning of joie de vivre, falling in love with the french culture, lifestyle and food. Jillian couldn't get enough of artisinal breads and pastries, so she learned how to make them herself. In 2010, Jillian graduated from The French Pastry School´s prestigious L´Art de la Pâtisserie program and founded Très Jolie Pâtisserie immediately after in order to share French culture and food with others.
